Sucrose Esters 50 g Texturestar
Improves the texture and stability of pastry and processed foods. Sucrose Esters is a food additive with a fine, white sugar-like texture. In baked goods, it improves batter volume, yields a fine crumb and uniform texture, and increases shelf life. Ingredients in sauces, salad dressings and ice cream remain emulsified. It's also used in chewing gum, dry cocoa mix and beverage whiteners.
- SMALLER OIL DROPLETS – With smaller oil droplets comes improved flavour perception, an improved creamy mouth feel (a large number of small oil droplets give the impression of a higher fat content) and a whiter colour (light is scattered differently on smaller oil droplets).
