"Greek-Style" Black Olives are cured first in salt and oil to draw out excessive bitterness, giving them a rich black, oily, wrinkled appearance. They are the perfect snack on their own with cocktails. They are delicious in Pierre Herme's Black Olive Shortbread, in a traditional Salade Nicoise, on a Pissaladiere, in pasta, or added to fresh salsa for grilled fish or chicken.
