The interior of the wafer is coated with egg white to prevent it from becoming soggy when filled, and each cone is wrapped in a small black paper to keep hands clean when serving. They offer tremendous convenience in the preparation of appetizers. Fill with smoked ham, pea or corn mousse, duck liver pate, or dressed microgreens.
